Copper pans have been used in the kitchen for centuries as it conducts the heat better than any other metal and therefore they heat up rapidly and evenly, near the top as well as at the bottom which results in shorter cooking times and some state tastier food.
This copper is fabricated here in France by BAUMALU - in the Alsace - France
BAUMALU produces HIGH QUALITY Copper Ware and can be compared with the more famous French Mauviel Copperware although there is a difference in the lining: Mauviel has a stainless steel lining - Baumalu copperware has a traditional TIN lining.
Copper is slightly acidic and reacts with certain foods and
copper pans used for cooking (except saucepans for caramelizing and bowls for beating eggs) are lined with another metal traditionally with tin. Today copper pans are often lined with stainless steel, which is more durable, but unfortunately a poor heat conductor
and food tends to stick easier than to tin !
The copper cookware has been TINNED BY HAND according to traditional techniques !
