I noticed today that amount of bids on each
item are not showing on each item. I have
a few items with bids on them - but when I
look at them on the search screen - it shows
no bids on them - just the "-" there. Anyone
else?

I found the same thing. Was looking for a specific item I want to buy. It did not show any bids but when I pulled the item up there were 9 bids. I check a few other items and it was the same way. But a few in the list showed just fine.

I had some auctions ending Wednesday night and was watching each one until the end (pathetic, I know...) and one ended with no bids. I get the EOA notices the next morning and it said that this auction had a bidder. I go back to My eBay and sure enough, I did. Have no idea how I missed it. Must have been the one time I didn't refresh.

The problem you are seeing is the looooong delays in ebaY's search indexes updating. They get behind and bids do not show on the search lists, but only on the item page.
The bid page can also be delayed - PARTICULARLY if the item in sniped. There have actually been cases of one bidder being shown as the winning bidder, and then a day or two later, the end of auction notice shows up with a different high bidder - and when you check the listing page, the winner is different as is the bid amount. This is a relatively rare occurrence - usually with snipes in the last few second.
