If a seller cancels a bid, does it show up in the bid history?
When I win an auction for my maximum bid, I like to check for shilling. On the bid history page I see "There were no bid retractions", but how do I know if there were bid cancellations?

Bid retraction is a cancellation,they will both show up in that area of the History.

Sellers cancel bids, bidders retract bids. Both will show up in the item history, and "no bid retractions" in this case means there have been neither bid cancellations nor retractions.

I think it's a little odd how often I seem to win for my exact maximum proxy bid, with no retractions or cancellations, but I'm glad to know it doesn't seem to involve fraud.
