You cannot "stop" the MO. If the correct assignee cashes them, you are out. If they are lost or cashed by the wrong person you can claim the loss (takes a while to collect), or in the case of fraudulent cashing, put a trace on them.

I believe you can stop payment on the money orders. Since today was a holiday, I would assume the money orders have not been received by the "Seller". I would get to the Post Office tomorrow as they open and speak to a supervisor - explain what has happened and that you need to stop payment.
I am hoping you at least have your receipts for the money orders - bring those with you.

Any chance you would be willing to e-mail me the seller's ID and/or auction #'s? My address is: [email protected] Hopefully, all will work out.
With that said, I like the idea about contacting your local PO.
While this may be a long shot....a VERY long shot, you could also give this a try:
Call up the destination post office and
explain the situation. Maybe there is a chance they can find the letter and send it back to you BEFORE they deliver it.
Of course, if the seller lives in a big city, this suggestion may be uselesss.

Maybe, just maybe, the seller is out of town for the long holiday weekend.
Try looking him up on the internet for a phone # or call directory assistance. Maybe he just forgot to change it with ebay. Personally, if I got a new phone number I would probably not think to change it on ebay until someone brought it to my attention. Heck I changed my password and forgot that AW needed it to launch my auctions.
But, I too would be a bit on the nerves side. What does his feedback look like? How long has the seller been registered?
Best of Luck to you.
One more thing you might try. Go to reverse phone information, plug in the number you have and see if it comes up with the address you mailed it to. Did you mail it to a PO Box? YIKES!

This is a long post, but is a response about stop-payment of a MO., from the USPS at [email protected] : The purchaser may, at any time, inquire about payment of a money order by completing, signing and filing a Money Order Inquiry, Form 6401.
The purchaser must also present the customer receipt to the Post Office for verification and pay the appropriate fee ($2.75). Visit your local Post Office to obtain a Form 6401.
If the money order is cashed a photocopy will be mailed to the address
on the Form 6401.
If the money order is not cashed a refund will be issued to the address on the Form 6401. Refunds will not issue until 60 days after the money order issue date.
Stop payments can not be placed on postal money orders.
