I thought when a buyer used a buy-it-now they paid as soon as the auction ended. How long would you give a buyer to pay for item?

No difference with a BIN auction than with any other auction!

If you require payment immediately after BIN, then you need to utilize PayPal's IMMEDIATE PAYMENT feature.
