We did this pretty often last year and I know I sure benefitted (or at least drooled) at some of the ideas/recipes put out ... what you cookin' for dinner this evening?

I'm making a family favorite. and I happened to time the prep tonite for it, and I threw it together in 8 minutes! ... gotta love those recipes! LOL

California Chicken

1-1/2 c. raw rice (not instant)

1 envelope of Lipton (or storebrand) Onion Soup Mix

chicken breasts, 3 or 4 or 5

1 can cream of mushroom soup

2-1/2 c. chicken broth (I make itwith water and instant bullion {sp?})

Butter casserole dish. Add rice and onion soup mix ... arranged chicken in single layer on top, and spoon (or pour slowly) the soup combined with chicken broth over the top ... dot with butter/oleo ... Bake at 325° for 1-1/2 hours ...

It's REAL good rice under there ... sometimes i make this recipe without the chicken as a rice pilaf ... tasty stuff.

a 4 pound 7 bone pot roast. Rubbed with spices and browned, braised in an iron skillet outside with diced tomatoes, whole garlic cloves, green chiles and 2 buck chuck Shiraz. Salad and more chuck to go with. Tail end of last year's beef, but there's a steer that's looking about 950 pounds out in the pasture, he should be ready in about 2 weeks.

Two of those great Teriyaki soups you can buy at Trader Joe's (dry - just add water) plus steamed broccoli. We've been eating too big lately . . . .

I'll bet that chicken recipe (above) would work well in a crockpot. Whatchoo think?

I took ms irked to dinner for Mother's Day. We had Chicken. She chose the place, not my favorite but it is her day.

It was Chicken Express. LOL she chose that cause she didn't want to get out of her yard clothes. LOL She like to go out and hand water the yard so she was too tired to redress so she said. I believe her too.

Hubby and Grandson took me out for dinner, after a long, hot day of working in the garden.

What a joy! No cooking, no kitchen clean-up! AND they let me pick the restaurant! My favorite Chinese restaurant (not their's) in Cedar (30 miles away but well worth the drive!). The bonus is that I will have three Chinese lunches from the left-overs for this week, while they are at work and school. YUM!

For a quick and easy chicken dinner, I do much as you do, but use Chicken flavored Rice-A-Roni (R-A-R). I brown the chicken first in lightly seasoned (garlic) olive oil, remove the chicken from the skillet, then follow package directions for the R-A-R. When ready to simmer the rice with seasonings, I just throw in the browned chicken breasts and let the breasts simmer with the rice, for the 30 or so minutes the package suggests. When simmer is done I like to throw in a hand full of frozen peas for a little color. The peas defrost quickly in the hot mixture and still have the snap that frozen peas are famous for. (Grated carrots, diced bell peppers, broccoli bits, or other favorite veggies work great, too, if added in the last ten minutes of simmer time.)

Learned this trick on a camping trip years ago, and it has long been a family favorite. Also works well for left-over bits of steak or roast in a beef flavored R-A-R.

Lots of things you can do with those marvelous R-A-R packages for quicky family dinners!

Pat: What's the name of that restaurant in Cedar City? We were never aware of a good Chinese place as we drove through enroute somewhere else.

I do what you do, throwing in some veggies for color (or nutrition) to a lot of dishes.

I love what you do with RAR. My husband went on a 2-week kayak trip with a friend, down the Missouri River retracing Lewis and Clark's journey up there. They had RAR every night with variations, for supper. Hubby said it was wonderful.

Hunan's is the restaurant. An old brick building in the Cedar Point shopping mall (if one could call it a "mall". Nothing fancy, but great food for the price! Teresa (the Americanized name for the owner) always fixes us a special treat -- something she's trying out for a menu idea - and we feel very 'spoiled' by her.

Teresa and her family were Chinese refugees who escaped to Taiwan years ago, so there is a Taiwanese twist to their cooking. Scrumptious!

And the Egg Drop Soup! Hubby will make a special trip to town for a tall to-go order of her soup when I'm down with a cold. She always packs in a large bag full of crispy wontons and sweet and sour dip. (Too bad I don't catch more colds!)

LOL, Pat, I thought RAR was my secret recipe. I cut up left-over rotisserie chicken REAL tiny - (makes it hard for my 10 year old to pick out and set aside) and throw it in with a handful of baby spinach (also hard to pick out when cooked down)

Aintrich--I don't use my crockpot very often; used it a lot when I was working full time, years ago. It was heavenly to come home at the end of the day to those delicious smells.

Some of the crockpot recipes in the book included rice in the ingredients. Never a problem. If you think about it, just soaking rice, not even boiling it, for a number of hours will soften it, as long as there's enough liquid in the crockpot.
