These are delicious. Really brings out the flavor. Next time I will just scrub them good and leave the peels on.
cut them about 1/2" thick or you can cut them like regular fries, lengthwise.

We love faux sweet potato fries! Have them at least once a week. The recipe I have called for cutting the potatoes in wedges but I switched to rounds because they are easy to cut and to brown on both sides. I set the oven for 450. I also keep a big package of julienne cut sweet potato fries from Sam's Club in the freezer for back up.
We don't eat white potatoes anymore because sweet potatoes are tastier and more nutritious.

One of the best is to cut them like your going to do fried potatoes, melt a stick of butter and when they are nearly done, add some brown sugar and a little cinnamon. Just a twist on sweet potatoes. Leave the peels on..
Green beans? Brown up a small amount of bacon in a skillet, then add the green beans and cook lightly, stir and if needed add a small amount of water.

Ladotters, I was with you till you added the sugar. I can't see why SWEET potatoes need any sugar. I was an adult before I had them roasted or baked with no added sugar and discovered why I hated sweet potatoes growing up. My family always added brown sugar and marshmallows. UGH!
