We were going to buy the 'prepared Thankgiving Dinner' but everyone protested too much..... argh

So, we got a TWENTY SIX (thats 26 pound) turkey, frozen

How long in the refrigator should it thaw, this is one big ass turkey!! Should it start thawing now in the refrigerator?

I hate the holidays........

(not really, but its just so much freaking work!)

Well not quite yet but soon and on the lower shelf.

try going to butterball.com and see what they say. They have some interesting recipes also.

Good luck with that 26 pound bird. Cooking it in a bag will reduce oven time and make it juicy....

Hey Libra

Thanks..... and it IS a Butterball!

I did put in google 'thawing a turkey' and the highest they go is 20 lbs (what I found) and they say 4-5 days in fridge for the 20 lb one!

I've just never noticed any that BIG before! (we are having 9-10 people over! ack!)

Ok, on Butterball, allow 1 day for every 4 pounds of turkey, thats SIX days! So I have put it on the bottom shelf now, and I am hoping that is going to be right (and safe!)

I think its going to break the shelf in the refrigerator!!! It is the bottom shelf, well, right above the vegetable bin thing....
Then there's all the side dishes. I do have the 2 ovens, THANK GOD!!

I'm gonna hate Christmas too

Yes, NearTheSea, it will be safe defrosting on the bottom shelf for that period of time. I might cut just one day off the recommended time and see how it is doing the day before. If it's not totally defrosted I'd leave it soaking in the sink in cold water for maybe 2-3 hours, turning it over at the halfway point. Need to get the giblets out to cook and add to the dressing. yum..yum..


That's a HUGE turkey...can hardly find ones that big anymore. And Butterballs are the very best, imo. I've never cook them in a bag before....but I have tasted them cooked in bags when others have done it that way. I cook mine in a huge covered roasting pan...stays moist that way too.

Mine's already thawed. He'll be hanging in the walk-in tuesday night. A 39 pound Bourbon Red Tom.

NTS: Yikes. I hope you have help with all the preparation. Are you going to make all the sides a day or two in advance? I always found that eases the whole shebang a little bit and not so many dishs/pots/pans backing up so you can clean and cook as you get done.

Have you seen that commericial for a deep fryers? I never really thought I'd care for a turkey out of a fryer, but they say cooking time is down to about an hour with one, instead of 4-5 hours which btw with 26#'s how many hours will that bird be cooking? Is it 20 mins a pound? I forget.

Profe, do you kill all your own food?

Nero, we butcher all of our own beef, poultry, lamb and goat meat, in addition to at least one elk a year and maybe a deer if a family member brings one in. Personally, I think venison makes great jerky and cat food, and that's about it. I don't do pork any more. When I was growing up, we butchered 2 hogs a year, sometimes more, but I never liked it... I get my pork from a neighboring ranch now in trade for lamb or chivo (goat). Hog butchering is too much work....

I was reading a magazine about thanksgiving turkeys and they suggested instead of l big bird that you cook two smaller ones. The cooking time is the same but they are easier to handle. I think it was womens world or something similiar.

Did you watch Good Morning America the other morning when they were sharing their Thanksgiving Recipes. Instead of using water for the potatoes they suggest chicken broth and I think they used half and half for the thinning along ofcourse with butter.

NTS may I suggest a simple Christmas Dinner so you don't have to waste your time cooking. Ham and scalloped potatoes with green bean casserole. It can all be done at the same time. Of course if you want extras ask your guest to bring a dish. You don't want to spend all your time in the Kitchen.

profe, you are such a man of the earth!!

I would never have it in me to kill a live animal or watch it being done. Guess you have to grow up seeing it when you are young. I've always read if you saw how meat was processed or slaughtered in the meat houses or whatever they call them, you'd never eat meat. My DH has a real thing about blood in meat and everything has to be cooked to almost burnt, so he doesnt see it or smell it. Whereas me, I like it rare as I think it tastes better.

It's also more tender rare. I'm with you Nero - I'll take rare any day of the week.

Prof - are you slaughtering the Turkey or are you going to make the new boyfriend work for his supper? Sounds like She Who Must Be Obeyed is going to have quite a clan to cook for. You will be rewarding her this year with something other than a tortilla maker right?

no fenix, I need the turkey to hang and cure for a couple of days so the new boyfriend will miss it. I'm saving the kid goat for him when he gets here wednesday. My son and I also borrowed from a neighbor a "special" horse for him to ride.
Originally we were going to cook our wild turkeys that we got this season, but this tom needs to be harvested so the wild birds will stay in the freezer.

We expect about 40 people all together, but not all at once. I do all of the meat cooking and La Seρora all of the vegetables, tamales, pies etc.

I was thinking this year I might get her a new wood splitting maul.....

NTS hope you put that turkey in the fridge today... should be thawed by Thursday morning...

Is there a bag big enough for a 26 lb turkey??
try the Jennie-O turkey in a bag,all you have to do is throw the bag in the oven.
I have 2 turkey dinner already,i dont know if i want more turkey come thanksgiving day??

All I buy is the turkey breast as hubby likes ham only,we have no family so we freeze the left overs and eat light on Christmas. I love the holidays as we take time to enjoy ourselves and relax. No flea market and I cut my listings on E-Bay except for the store. We goofed off today and will enjoy the vacation until the first of the year.

So since this thread appears to be lagging, maybe those of you who buy your turkeys in the grocery store can opine on the following.
We just went in to town to do the shopping for Thanksgiving (not including meat, obviously}. We went to three different stores, all were offering some variation on a deal whereby you get your turkey almost free if you spend so much. Those turkeys, as I'm sure you know, were killed last year and cryogenically preserved in -80 deg. F freezers. Each store also had fresh, never frozen turkeys that they were selling. These birds averaged about 1.39 to 1.50 a pound, while the special deal birds could be had for as little as .39 a pound.

What makes people feel that they should get the main course of what is arguably the most important and special meal of the year for free or nearly so?

At a buck and a half a pound for a nice, unfrozen, recently butchered bird, who would say no to that?? I don't get it. You can't buy another single item in your grocer's butcher section for that kind of money. Not hamburger, not bacon, not even stew meat or bones. So why would you want to get your masterpiece for cheap, especially knowing how long it's been since it died??????

I've always wondered about thoseturkey's Prof - thanks for clearing that one up. Have to admit we bought a few this year but they were for a food bank run by the neighbors. I'm having a goose... I wanted duck but I was vetoed.

I realize that Turkey's are sold so cheap basically to serve as loss leaders but how in the world are people that are raising these turkeys surviving when you look at the prices?

They do pretty well, believe it or not. The birds are nearly all grown under contract to packing companies, like Jennie-O or Butterball. Not a single one goes unsold as far as the growers are concerned. The growers raise them by the thousands, in what amount to huge poultry factories. There is a nearby farm that raises organic turkeys. Your bird is butchered the day before you pick it up. Happy turkeys. They fetch 3.00 a pound and are all sold out a month before Thanksgiving. Tasty meat, for sure. It justs really gets me that the American consumer is so dumb they can't see through the ruse of buying all the fixings at inflated prices just to get the main course free. In one store where we shopped today, green beans were 3 bucks a pound, and we bought them there two weeks ago for 1.89...salad olives 10 cans for 10 dollars..smokin' deal except the rest of the year they're often on sale for .89 a can...

We had a goose last year on New Year's. I rubbed it with chipotle paste, stuffed it with apples, celery and onion and cooked it in the outside oven. Purty tasty....
