I've had enough turkey and ham to last me for a year,I'm going to fix a roast. I used to fix duck but I'm the only one who eats it.

Duck! Yum! That sounds really good. A little Pomegranate/Orange glaze... some of that fantastic Cranberry salsa that Chimp gave us the recipe for..... Some cornbread stuffing... Yeah... that sounds good.

Roast goose is great! Had it one year when a book club I was a member of had a Dickens Christmas feast after we read "A Christmas Carol."

Another thing that's nice is game hens. One year my mother made us each an individual bird (for Thanksgiving, but it would work for Xmas, too) and 41 years later I still remember that particular meal.

Love the Bunny Bunni.

Ron - I had Goose last year. Not only is it great but the renderings are good too. My step loves to fry his eggs up in the goose greese, a touch of flavor but not really heavy.

Christmas eve: tamales de chivo: blue corn tamales filled with red chile and goat meat

posole: white and red corn hominy stewed with pork and red chile

chiles en nogadas: roasted green chiles, stuffed with Chihuahua Mennonite cheese and baked in a white cream walnut/almond sauce

black beans and tortillas


Christmas day:

Elk roasts: braised with cranberries, brown sugar, herbs de provence, habanero chiles and Guinness in the dutch ovens.

Goose: we'll roast as many as the crowd requires in the outdoor mud oven. We have too many this year, need to thin out the flock.

To take up the slack, I'm thinking of a dry cured real honest to goodness Smithfield boil-it-all-night-then-bake-it ham that someone gave me recently in trade for some turkeys, and we may spit roast a goat or young sheep as well. Current estimates are between 15 and 40 guests, so who knows...good thing meat isn't in short supply around here!

Of course, there will be plenty of cigars and Carlos I brandy, and a horseback ride or two to get the kinks out...who's in??

Yes jack Daniels would be fine. My wife is tired of all the hoopla and cooking but will probably fix the usual fare.

If she cooked duck no one would show up including me.

She mentioned Mexican food hummm that would be so good.

So what ever she fixes will be fine with me except the duck or goose or any other foul smelling bird.

This hillbilly's Xmas dinner is certain to be an epicurean delight, pleasing to the most discerning palates. Wild turkey smoked with apple wood, stuffed with oranges and apples. Baked white corn grits w/cheese, mashed potatoes w/gravy and persimmon/peanut-butter/yam pie a mile high! Possibly a few other hillbilly treats!

As the German proverb advises,"Der Apfel f§llt nicht weit vom Stamm". And in addition to the apple not falling far from the trees another proverb, "the big fish eat the little fish applies.

Hah...sure they do...they just need to get to know a few things, that's all. You don't marry a member of this family without you marry us all, that's just how it is. I know a lot of folks say that, but with us, it's true. Our way of life is old and doesn't change any more often than it has to. My "initiations", are just a friendly way of saying "you are welcome here, young fella, but if you've got more than a passing interest in one of us, be advised it will in no wise be easy."

Doesn't mean I can't have a little fun introducin' them to our ways...folks oughta know where their meat comes from, if you ask me.

We have the same saying helen:

La manzana no cae lejos de su arbol...and you're right fenix, the girls take secret delight in it too.

We got this mule recently from a neighbor in trade for a trailer load of hay...my wife, ex and the girls can ride him ok, but he has dumped both me and the boy in the dirt a bunch of times...wonder if city boys are any more to his liking?
