After a customer has purchased items in the store and checked out, can they access their invoice again or do I have to send them a WB notice again with the link? Also, if I wanted to give a discount on items purchased in the store, do I apply the credit and then re-send them a WB notice (and will this new notice show the discount?). Many thanks for you help.

The customer will have the option to print the invoice when he/she is at the store (during the purchase). After which, you can reference the email that is mail to the customer which is an order confirmation.
If you give a discount on your store items, you'll need to send the notice again.
