I've looked and looked and can't find this answer. I'm hoping there's a way to specify what particular items get shown in the gallery.
I often list variations of one item, and it is unsightly to see the gallery showing ten of the same item. I want viewers to see more variety, other than the three variations I found in the item display order section of the gallery preferences page (which are just different choices between eBay auction or eBay store items, and thus, doesn't indicate an ability to pick specific items to display).
If it's possible to pick individual items to display (like you can w/Auctiva), that'd be great! And if so, how many items get scrolled total?

The vendio templates don't show what they appear to show in the sample template (3 or 4 lines of products), the real template shows only 5 items (one line) at most then nothing else. There definitely should be a way to put more items as featured as shown in the sample templates.
Please note that the gallery that Soulstouchgifts was referring to is the gallery that shows one image of each active eBay listing on the eBay listings (the scrolling marquee).
The gallery for the Vendio Store is the featured items, which are images for Vendio Store items that are shown on your Vendio Store home page.
The number of images that can be shown in the featured items section is dependent on the template that you are using. The maximum number that can be shown there is nine. Please note that if you add more than the maximum number for a given template, the potential buyers will be able to click a link to see the rest of the featured items.

that's exactly what I'm saying, the template I chose shows 10 ITEMS AS FEATURED however only 5 ARE SHOWN, I have an ID bracelet that I also chose as featured but it doesn't show it, it only shows the 5 items.
Can this be solved?

I apologize for the confusion. The particular template that you have chosen is limited to 5 featured items on the home page. The reason you are seeing 10 items in the preview is because the preview shows the product page (rather than the home page).
