I would like to support a local non-profit organization. Is there a way to add a field during checkout for people to specify an amount they would like to donate, which I will then pass on to the organization? Or is there perhaps another method altogether I might use?
It is not possible to do this automatically, unfortunately. However, there is a notes field during the checkout process, and you can direct your buyers there to send you a message with their order.
