When a customer firsts enters my store, they see random items in a "gallery" style setting. Once they click on a category they want to view, the items show up in that category in "list" style. Is there a way to set it up so those items are displayed in gallery style also?

While this is something that you might be able to do using your own HTML code, the specifics of how to do this are unfortunately beyond the scope of what we would be able to help you with here.
