Coconut oil has been used for thousands of years as cooking oil particularly in Southeast Asian countries where it grows in abundance. In America it was even promoted in cookbooks of the 19th century. It is prized for its stability allowing it to remain fresh and not turn rancid quickly like many oils. Beginning several decades ago saturated fats received extensive bad publicity and their use declined until today very few people know about the potential benefits of including coconut oil in the diet.
Research now shows the body needs some saturated fat for optimum health and virgin coconut oil is a good source since it contains easily digestible medium chain triglycerides (MCT). These MCT have been shown to increase metabolism and stimulate the thyroid.
Coconut oil can also have a positive impact on cholesterol levels. It is believed that coconut oil can help stimulate the thyroid which results in an enzymatic process converting cholesterol into helpful agents like DHEA and progesterone. Research shows using coconut oil in place of many other cooking oils can result in a better HDL/LDL cholesterol ratio. Recent studies looked at the effect of increasing levels of lauric acid and myristic acid in the diet. In these instances LDL cholesterol levels decline while HDL levels increased resulting in a better ratio of HDL to LDL. A review of studies conducted on people whose diets were high in coconut and coconut oil concluded that coconut oil does not lead to increased serum cholesterol or increased risk of death due to coronary heart disease.
