The Cookbook collection of The Seybold Guest Ranch included books regarding large crowds. Quantity Cookery, 1951 edition, is just one of many found.

This book has pages of table weights and measures of just about every food available, planning machanic, meeting the budget, planning for left overs, 

even where fish are caught. A very delightful read. There are no tears or crimps.
