Now, authentic fajitas are available at home, thanks to this shallow, cast iron fajita pan. Resting on a red-stained wooden base, the pan set also comes with a special potholder (decorated with red chili peppers) that fits over the pan handle. While broiling steak, chicken, or tofu, put the fajita pan into the oven and heat for 30 minutes. When the food is cooked, and the onions and peppers are sautéed, pile them all on the heated pan and carry them sizzling to the table. Serve with a basket of warmed flour tortillas.
