This salt is produced by solar evaporation
of sea water, in ponds located by the Red Sea coast (Gulf of Aqaba).
The salt
manufacturing is done without chemicals, obtaining the white crystals glare. It
is high quality salt, best for food.
Salt production is a continuous process,
starting with pumping of water from the sea into the evaporation pools ending
with the crystallization of the salt.
The sealing of the evaporation pools is based
only on clay. In the new pools, built in the Evrona salt deposit area after
1990, additional reinforcement was added to prevent seepage of clay with a
polyethylene lining the bottom of the pools.
The sea water is drawn from the north-eastern part of the Eilat bay and pumped
through 10 km of underwater pipes to the Evrona pools. The water flows from
pool to pool naturally, as the pools are built on a downward slope running from
north to south. The flow is regulated by special manually-operated openings.
The brine coming out of the Evrona pools, which is 3 times as concentrated as
sea water, is then pumped back through an underground pipe to pools situated
further south, near the North Shore in Eilat.
The amount of water and the concentration of
the salt are calculated and controlled to allow the sedimentation of unwanted
substances throughout the various production processes, so that the final
product, which is crystallized at the end of the process, is of the highest
quality. The concentration of salt in the sea water pumped into the evaporation
pools is about 4%, and at the end of the process it reaches around 25%, at
which stage the crystallization begins. When the solutions reach a
concentration of 30% salt, the water is drained from the pools to the sea.
The salt which crystallizes in the pools is
harvested once or twice a year. The harvesting is done by mechanical equipment,
and the salt is stacked in heaps in open-air storage areas in the plants. The
salt usually undergoes its first washing before being stacked. The purpose of
the washing is to remove traces of magnesium salts, gypsum, clay and sand which
remain in the solution after the production process. The salt heaps are the
‘raw material stores” from which the salt is taken for further processing - a
second washing, grinding, drying, sifting and packaging.
The salt yield of the evaporation pools system
depends on two factors:
the area and the evaporation data for the region, which obviously depend on the
climatic conditions. Since these conditions vary from one production plant to
another, the amount of salt produced also varies from plant to plant.
