Bourbon Balls

1 1/2 c. sifted sugar
1/3 c. bourbon
1/4 c. light corn syrup or honey
2 1/2 c. crushed vanilla wafers
1 c. coarsely chopped pecans
1 tbsp. unsweetened cocoa powder

Mix 1 cup sugar, bourbon and syrup in bowl. Add wafers and nuts. Mix it all up the roll into small bite sized balls.

Recipe says to sift remaining sugar and cocoa together and roll the balls in them but I coat them in powdered sugar and then sift coa over the top.

Another good one is Chocolate, Rum & Expresso....

1 package of Vanilla Wafers
1/2 cup of chopped pecans
1/3 cup of dark rum
2 shots of espresso
3 tablespoons of honey
1 1/2 tablespoons of cocoa powder

I made Anise Cookies with Lemon Icing today but that one is a two day deal and you REALLY have to like Anise (and have a lot of it - takes 1/2 cup of seeds). If you do I'll gladly share the recipe - they are kind of like a Licorice alternative to ginger snaps with a little lemon bite.

This week I am going to play around with a Margarita version of the Rum & Bourbon balls. I just need to find a good tequila.

Try Jose Cuervo Gold-- My Margarita loving husband won't use anything else. Grand Marnier instead of triple sec. And I would dance naked in the street for the recipe!!!!!!!!!!

Fun - I liked Cuervo until I had real Mexican Tequilla that you can drink like water it's so smooth and makes me speak perfect spanish. That's what I need to find!

I haven't tried these, but they sound interesting. I'm off to buy some vanilla wafers!

Ps, sounds like it needs a lot more tequilla!

<b>Margarita Balls</b>

Ingredients
1 (12-ounce) package vanilla wafers
1/2 cup pretzel crumbs (about 1 cup pretzels)
1 (16-ounce) pkg. confectioners' sugar, sifted
3/4 cup frozen margarita or limeade concentrate, thawed
2 (3-ounce) package cream cheese
1 teaspoon tequila, or to taste, optional
1 teaspoon Triple Sec (orange liqueur), or to taste, optional
Rind from 1 lime, grated fine (divided use)
1 (2.25-ounce) shaker green decorator sugar
1 cup granulated sugar


Instructions
Place half the vanilla wafers in bowl of food processor fitted with knife blade. Process to fine crumbs. Remove crumbs and reserve. Repeat with remaining wafers. Add pretzels (about 1 cup) to food processor and process to fine crumbs to make 1/2 cup crumbs. In large bowl, combine wafer crumbs, pretzel crumbs, powdered sugar, margarita concentrate and cream cheese. Add tequila and Triple Sec, if desired. Stir until well blended. Divide mixture in half. Wrap each half tightly in plastic wrap and set aside.

Combine half the grated lime with decorator sugar and half with granulated sugar on small saucers or in small bowls, stirring to distribute lime peel evenly. Remove plastic wrap from 1 portion of the dough and shape into small 1-inch balls. After shaping each ball, roll each in green or white sugar. Work quickly, because the treats dry quickly. Repeat until all dough is used. Store in an airtight container in refrigerator up to 1 week.

Yield: 7 dozen
