I just used the auto relist for some active auctions. If I am not mistaken this means they will relist twice - correct?? Is there anyway to relist once only?

When you enable auto relist you have the option of setting how many times you want it to automatically relist if it doesn't sell. The default is to do it once. You can check what you set for it by going to active, selecting those set for auto relist, and hitting the Set Auto Relist button. On the next page you should see to the left how many times you had set it to auto relist.
