I go out of town quite often and I'd like to know if there's a way either through vendio or ebay that I can "mass edit" auctions that I have launched or in my store (not much there right now) to add a few sentences to the effect that I'm out of town and there will be a delay in responding to email and filling orders until I return.

That would be a great feature, but unfortunately, there is no way to mass edit your items at this time. The best you could do would be to set an autoresponder on your primary eBay email address to tell users writing you when you will be back and in touch.
edited to add : When you edit your storefront, you could close it just temporarily while gone.

Actually, what you can do is in "Default Listing Text" (My Account->Custom Listing Text) put a note saying you'll be out of town. When an auction is launched, that'll be added to the end of the listing.
I did the same thing when I went out of town for a week. Simply specified that payment would have to be received by Mar 26 to be sent out before I left. Otherwise, items would be shipped in the first week of Apr.
