When I look at my inventory items (description, title, SKU #, etc)
there is a field for "Avg Item Cost"

What does that mean and how can I make use of it?

This is a field that you can use for internal purposes. It won't show up on your customers orders in anyway.

This field allows you the opportunity to add the average cost to your item. You'll have to calculate this cost as the field won't generate the cost for you.
