YES, I WOULD LIKE TO KNOW THAT TO. AT THE RATE THING'S ARE GOING I WON'T HAVE ANY CUSTOMERS LEFT BY THE END OF THE WEEK.
You can disable the checkout button and automatic WBN settings via the My Account page, under the Post Sale Management link found within.

How will this affect my GTC eBay store listings? They're already set up with the checkout enabled. Would I have to end them all and relist?
No, if you click the All Active link along the left hand side of the Sales Manager page and then select the item/s in question, you can use the 'Set WBN' button to disable the automatic WBN for those items.
To remove the actual 'checkout' button if you use it, you would need to either edit them at eBay to remove the HTML or end them and relist.
