Hi! eBay is rather vague about the definition of a "choice auction". Is it as restrictive as any choice whatsoever? I personally think if you are offering an item and offer a choice of say color and the items are identical in every other way that should be OK. I would not think the same say for a Pokemon figure and you choose the character. It's a fine line. What do you think?

If you have a variety of colors, list them ALL. The instant the winner has a choice of items, you are gonna get shut down.

I have seen auctions that have the choice but it is rather subtle.
Say you have a blue widget, and also have it in red and green. You start an auction for each color. In the other two auctions you mention that it also comes in red and green and look at your other sales for these colors.
This is how I have seen it in a couple of different widget auctions.

eBay states:
Choice Auctions
A Choice Listing occurs when a seller allows bidders to choose from a selection of items. Choice Listings can be problematic because the item agreed upon is negotiated offline and can lead to either misrepresentation or fraud.
Policy: Choice Auctions are not allowed and will be ended. The insertion fee will be automatically credited for that listing.
It states "a selection of items". Is it a selection of items if you have "a widget" and it can be "red, green or blue"?
