I make "widgets". I know I can't offer a "your choice of color" in my auction, but I'm tired of making auctions saying "this lot of widets includes one red, one green, one blue, and one black". Can I say without ebay getting their undies in a knot "lot of x number of widgets in assorted colors" and then I choose the colors? Any advice?

I have used before "in bright colors" or "in pastel colors". The cost of each item averages out to about 60¢ each, and most are used as gifts -- tuck-ins in envelopes usually, so I can't immagine getting a neg because someone got one in light green when they wanted light blue. Also, if a bidder tells me they would like a certain color is it against ebay rules to accomidate that? After having an auction shut down last year, I'm a little nervous.

Just because you can't imagine someone negging you for that, do not assume that they won't.
I too sell a particular type of glass widget and I have several of these widgets. Although they are all very similar, they are all hand blown so they are not identical.
I simply put this in my auctions, "The widget you receive will vary from the picture below" But all of my widgets are the same color, so I have not had a problem.

So ebay rules WOULD allow me to say "assorted pastel colors". I've sold hundreds of these before ebay shut down an auction, and have had no problems with people upset with colors, so I'll risk it, so much less work, but wanted to make sure ebay wouldn't tell me "you can't do that".

A Choice Listing occurs when a seller allows bidders to choose from a selection of items. Choice Listings can be problematic because the item agreed upon is negotiated offline and can lead to either misrepresentation or fraud.
Policy: Choice Auctions are not allowed and will be ended. The insertion fee will be automatically credited for that listing."
It looks like you would technically be allowed to say that buyer will receive an assortment, but I think you might risk turning off bidders. It might be better to have a photo with all the colors available but state exactly which colors are included in each auction. As a bidder I like to know exactly what I am getting and not be subjected to the whims of the seller--JMHO...
