Does anyone know when eBay gets most of it's
traffic? (day of the week and around what time of the day)Is it better to have your auctions end about this time? Or is there more chances for
eBay's server to be down during that time because of the traffic?

I try to get all my auction's to end on sunday night. That makes sure people have Fri,Sat,Sun, These are the day's people are more likely to sit back and spend time in front of the computer. Also try to end them after 6:00pm Pacific time, That gives people time to finish their outdoor & away from home activities. Always consider Pacific time. A lot of buyer's are in the west, you don't want auction's ending when they're not at home to bid!

Ironically, the high traffic time, which is Sunday evening, is probably one of the worst times to have your auctions end.
WHY?
Because that is the time when Ebay servers are under the most pressure and are most likely to suffer delays. Plus, if your bidders are using any sniping tools, there's a good chance the bids will never get placed due to how busy it is.
Been there, done that. Never again.
I happily list and schedule auction expirations for the evening time during the week (Tues, Wed, Thurs).
No problems technically AND great action. My last round of auctions set a new sell through rate record for me--95%.
