I didn't see it in the feature list. Is it possible to have AW get the list of all bidders (not only the winners) including their email addresses, eBay rating, and the amounts they bid, then pick & choose manually the best ones and create an email list which can be used for bulk emails.

A very quick way to get booted off eBay. Don't even think about it.
If you wish to create an opt-in list, you can put instructions for your bidders in your EOA. This would only be for eBay auctions and you must adhere to normal rules for such lists, such as removal of an address upon notification.
It's much easier and less expensive to provide a URL for a bidder to look up your auctions on their own than to maintain a list. The overwhelming majority of bidders will buy a one or two things from you and you don't hear from them again. Maybe 5% do some real repeat business which is great.

My advice is it isn't worth the trouble. As mentioned in the prior note, 99% of sales are one shot deals. You can figure in this day and age where people get dozens or emails merchants daily, they are going to dump most of them without even opening them. A large percentage will block your emails, even more are going to be ticked because you sent it. You might get 1 sale for every 2-300 emails you send out if you are lucky!
