Has anyone had any success or have any suggestions on the best way to lead buyers by the nose so that they will use AWs checkout instead of Ebay's?

AW's checkout? Do you mean filling out the WBN you send? As far as Ebay..if you dont want thier checkout..just turn it off.

You can turn off eBay's Checkout in both eBay and AW.
But that still leaves the Checkout instructions.
Some sellers include their post-sales instructions there, indicating that the winner will receive an e-mail, find a link to a form, etc.
Personnally, I don't think that buyers actually go back to the auction after it is over to find out anything, despite the automatic e-mail from eBay at the auction's close,

Personally I don't think you should use either. Both systems in my opinion are too impersonal and make it very confusing to many buyers. A personal e-mail is much better. I have one on file and simply fill in the info for the auction and send it. I have had much better luck with it as far as customer satisfaction goes.
I have many people ask for totals in the ebay checkout and I always refer them to the e-mail. Once they read the e-mail, the transaction will take place as it explains exactly what to do instead of a lot of assumptions with the Automated ones from Ebay and AW.
