Again...don't open any emails to yourself that have no subject line but do contain an attachment. The only thing in the body of the email says PRICE or NEW PRICE. It is a VIRUS/TROJAN! The email looks like it is from yourself to yourself. If you have Outlook you can right click on the email and view OPTIONS and read the header.

Just had the Crockpot Mexican Chicken for supper - yummm! For the newbies - it's a recipe from last year (who gave it?) where you put boneless chicken breasts in a Crockpot - add one jar of el cheapo Salsa and cook all day. When it gets done, you shred the chicken and add to burritos. I add a Monterey jack/Colby cheese combo & chopped tomatoes and roll my burritos up. I add Walmart brand Red Sauce which is identical to El Paso Enchilada sauce (had them side by side and tasted both) to the casserole dish after spraying it with Pam. Then I put the burritos in there and dribble a little sauce over the top and add cheese mixture and any left over tomato on top. Cover with foil and bake in the oven until done. Add Sour Cream and you're in heaven! Thanks for the recipe!!!!

I love those. Try Peach Salsa... Mango salsa is nice too...

I make mexican rice and heat up the Campbells Cheesy fiesta chedder soup (not the real name - it escapes me)add in the crockpot salsa chicken, and make a nice hot mexican soup. We haven't had it all summer but I just bought the ingredients today to make it this week.

i got hungry when i read the mexican crockpot recipe last night. it sounds like it's perfect to put on the back burner while i work on eBay during the day. yummy!

I think it would be great rolled up in soft burritos and made as a taco. Or in Taco's even instead of hamburger.

you people are making me hungry!

here's a pasta salad one i make, that's quick and makes a lot for people to munch on. made it the day before yesterday and we're still eating it for lunch, snacks, etc.

1 lb. box of rotini (corkscrew pasta), boil and drain. add 4 cans of tuna (in spring water, who needs the extra oil?) that you've drained. dump in 8 oz. of your favorite italian dressing. about 4 tomatoes, in bite-sized chunks, ditto for 2 green peppers and a few stalks of celery and onion to taste (i usually use a medium red onion). a pinch of sugar to neutralize tomato acidity, pepper and Season-All salt to taste. basil, oregano, thyme and parsley to taste. (i try to use fresh from my garden when possible). 1 or 2 finely minced garlic cloves.

stir it, refrigerate, let it marinate. cheap and good, makes a ton.

Here's a recipe to my never fail but artery clogging halibut chowder....

Halibut Chowder

3 cans cream of potato soup
1 can cream of mushroom soup
4 cups of milk
1 1/2 - 2 Bricks (8oz) of cream cheese
3 potatoes chopped fine - microwave until done
3 large carrots sliced into coins - microwave until done
1 can corn
4-5 Cups of Halibut
8-9 green onions - chopped
3 cloves of garlic
1/2 Cup Margarine or butter
-----------------------------------------
Saute the halibut, onions and garlic in the margarine.
Warm the milk in a pot to steaming but not boiling
Add the cheese and mix in completely
Add all the soups and simmer 10 minutes
Add all the vegetables
Add all the sauted items plus a bit of black pepper and dill weed to taste.
Mix and simmer 10 minutes

How about some Chocolate Nut Fudge. You've got to try this one.

I found this recipe on Google & it peaked my curiosity because it got 466 reviews & over 99% loved it, even said it was the best fudge they ever tasted & it is sooooo easy to make.
Made it last night & have to agree it's the best I've ever had.
(I used an 8 x 8 throw away aluminum pan & you don't need to butter it)

Aunt Teen's Creamy Chocolate Fudge

"This was my aunt's recipe for fudge, passed down through the family. It's better than any fudge I've ever had at the Jersey shore, and easy enough to whip up in 15 minutes or so." Original recipe yield: 3 pounds.

INGREDIENTS:
1 (7 ounce) jar marshmallow creme (not fluff, cream)
1 1/2 cups white sugar
2/3 cup evaporated milk
1/4 cup butter
1/4 teaspoon salt
2 cups milk chocolate chips
1 cup semisweet chocolate chips
1/2 cup chopped nuts
1 teaspoon vanilla extract

DIRECTIONS:
Line an 8x8 inch pan with aluminum foil. Set aside.
In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.

You might want to read some of these because some reviewers made some changes with the sugar amounts & chips & it still came out perfect.

Ewora - that sounds damn near as healthy as my "Coronary on a Plate" Omelettes.

Fry up half a pound of - KEEP the grease!
2 russet and 2 red potatoes - microwave them to about 3/4 of the way done then cut them into small cubes (you can cheet and use the frozen cubes, I just like adding the red) then fry the rest of the way in the bacon gease.
Toss in a little steak (I go grill crazy about twice a month and make enough to last me - eat some then freeze the rest for sandwiches and these omlettes).
Slice some red onions and mix those in with a couple eggs and half and half to keep it fluffy.
Fill the omette with the potatoes, steak, bacon and your favorite cheese.

Great for a weekend brunch but somehow always tasted best at about 3am when we would get back from the bar.

Here's another nice healthy one for you. First, you cook up 3 or 4 cups of brown rice (I guess you can use white, but it doesn't hold up as well). Then microwave up in one big bowl, 1 lb frozen peas, 1 lb frozen corn, and 1 lb frozen edemama soy beans (just the beans, not the shells). Once they are cooked throw them all in with the rice, add 2 cans of Costco Canned Chicken Beast. Mix it all up together and chill. When you serve, put on salad dressing of choice, Chinese dressing makes a great chinese chicken salad, Ranch is my son's favorite. My wife likes it plain, with no dressing. I like paul newman's raspberry walnut dressing. Anyway you do it, you can eat as much as you want (as long as you limit the dressing), and you won't gain weight... Very Weight Watcher's Friendly.

My kids love my Rosa Marina. You have to love the taste of garlic to like this! It makes a great side dish for chicken. I eat it alone as well.

One box Orzo
3-4 cloves garlic chopped fine
2 cans chicken broth

Sautee garlic in about a tablespoon of butter or margarine until soft in a non-stick pan. Add Orzo. Stir and cook on low heat for a couple of minutes (don't let the Orzo brown). Add 1 can chicken broth. Let sit to allow some of the liquid to absorb. Add the other can of chicken broth. Cook on low heat until liquid is absorbed and Orzo is soft. Stir it often!!! I continue to cook it until it looks like fat rice with no liquid.

Another dish they love and that's easy to make is a dish Ken calls Pot Pie without the pie.

3-4 boneless chicken breasts cut up into bite size pieces
1 bag frozen mixed vegetables
1 can cream of chicken soup
1 can cream of celery soup

Cook chicken in a pan until thoroughly cooked. Add soup and 1/2 - 1 can of water. Add veggies. Stir until mixed. Cook until veggies are cooked and sauce thickens. Serve over rice.

That dish is very simple and quick to make.
