Going out to dinner; when I get back, I hope someone here has a good basic recipe for sweet potatoes with that marshmallow topping. A friend has invited us and wants me to bring this, and I've never done it! SOS.

To make this ebay related, I suppose I could try to sell the recipe on ebay after Thanksgiving. Not.

marshmallows are a horrible thing to do to sweet potatoes....oh, the horror!!

Surprise your friends...educate them that sweet potatoes and marshmallows weren't born together.

parboil a bunch of yams (they're ain't no such thing as sweet potatoes in this country)

let them cool so's you can handle them without swearing

peel them

halve them

stuff them in close order into a baking dish in one layer

liberally dose them with fresh ground black pepper and kosher salt. Don't use that dust that comes pre-ground. you might as well go to the fireplace and get ashes...

pack dark brown sugar all over them.

Pour on enough real orange juice to moisten. Leave the Donald Duck for the neighbor kids. Use real OJ.

cover with foil and bake until they start to carmelize on top.

eschew at every opportunity the hideous, nasty chemical sponge known as marshmallows.

Funny you should mention sweet potatoes! I just requested this recipe today from the Watershed Restaurant in Atlanta after watching it being prepared on Food Network. No marshmallows, but it sure looks and sounds good!

Sweet Potato Casserole

Ingredients:
5 pounds small sweet potatoes (about 10 potatoes)
8 tablespoons unsalted butter (1 stick)
1 ¾ teaspoons salt
¾ teaspoon freshly grated nutmeg
1/3 cup honey
1/3 cup light brown sugar
½ cup granulated sugar
3 eggs, lightly beaten
2 teaspoons vanilla extract
3 cups milk, heated
1 tablespoon unsalted butter, softened

Topping Ingredients:
1 cup light brown sugar
1 cup all purpose flour
½ teaspoon ground Ceylon cinnamon
½ teaspoon freshly grated nutmeg
¼ teaspoon salt
8 tablespoons unsalted butter (1 stick), chilled
1 cup chopped pecans

Preheat the oven to 350 F.
Wash the sweet potatoes and put them on a foil- or parchment-lined baking sheet. Bake in the preheated oven for 1 to 1 ½ hours, until they are very tender. Remove from the oven and allow to cool briefly, then peel. Put the peeled sweet potatoes into the large bowl of an electric mixer fitted with beaters or a whip attachment. Mix the hot sweet potatoes on low speed to begin mashing them. Add the butter, and mix until it is absorbed. Add the salt, nutmeg, honey, and both sugars, and mix until they are thoroughly blended. Add the lightly beaten eggs and vanilla, and beat on medium speed for 2 minutes. Reduce mixer speed to low, and slowly add the heated milk. When the milk is incorporated, taste carefully for seasoning, and add more salt or nutmeg as needed. Thoroughly butter a 9 x 13 x 2 inch baking dish with the softened butter, and pour the sweet potato mixture into it.
Raise the oven temperature to 375 F.
Make the topping: Put the brown sugar, flour, cinnamon, nutmeg and salt into a mixing bowl and mix well. Use your fingers to work the chilled butter into the mixture until it resembles oatmeal with some pea-size pieces of butter in it. Stir in the pecan pieces, and mix well. Sprinkle the mixture evenly over the top of the sweet potatoes, and bake in the 375 F oven for 30-45 minutes, until the topping is golden brown and crisp and the sweet potatoes are set but still slightly loose in the center. Serve hot.

Chop Anthonio Banderas into small pieces and bake them in giant casserole covered with cinnamon,you will get one hell of a sweet potato deal!

Okay, here's the Southern way to do this. Bake your sweet potatoes til done. Peel when done. Really, you just canjust cut them in half and "smush" them out of the peels, they're so tough. Mash them with some butter and maybe a little milk or 1/2 and 1/2; add some pecans and put in a casserole. I wouldn't dream of putting either salt or pepper in them! Put your marshmallows on top and bake until melted. They're awesome - don't listen to these people. My mamma always put marshmallows on top and, to me, that's the way they're supposed to be. We're back from dinner and I thank you all sincerely for these great sounding recipes. I might try one for our friends' dinner and then another one later on for us. I have never seen the point of the marshmallows on sweet potatoes but the friend has requested them.

Sweet Potato Casserole Recipe

4 sweet potatoes
1/2 cup butter
2 eggs
1/2 cup hot milk
1/2 cup brown sugar
1 teaspoon vanilla
minature marshmallows (optional)
chopped pecans (optional)
pineapple rings (optional)
cherries (optional)

Before putting together the sweet potato casserole, preheat your oven to 375 degrees f.

Boil sweet potatoes until tender; peel and mash. Add butter and mash into sweet potatoes. Add eggs and beat vigorously.

Add milk, brown sugar and vanilla. If desired, add marshmallows and/or pecans. Mix well.

Pour the sweet potato mixture into a casserole; cover with pineapple and/or cherries, if desired.

Sprinkle with brown sugar and bake for 20 minutes.

Apple Yam Casserole

INGREDIENTS:

3 sweet potatoes, peeled and cubed
2 Granny Smith apples - peeled, cored and sliced
1/2 cup packed brown sugar
1/2 cup water
1/4 teaspoon ground cinnamon
1/2 cup raisins
2 tablespoons butter
1/4 teaspoon salt
3 tablespoons all-purpose flour
3 slices lemon, thinly sliced


DIRECTIONS:
Preheat oven to 350 degrees F. Lightly grease a 2 quart casserole dish.
In the casserole dish, alternately layer the sweet potatoes and apples.
In a medium saucepan over medium heat, mix together brown sugar, 1/3 cup water, cinnamon, raisins, butter and salt. Cook 5 minutes.
In a small bowl, stir together remaining water and flour. Combine with the brown sugar mixture. Pour over the sweet potatoes and apples. Place the lemon slices on top.
Bake covered in the preheated oven 20 minutes. Uncover and continue baking 20 minutes, or until the sweet potatoes and apples are tender.

It doesn't call for marshmallows, but you sure could add them if you want.

As a kid I always hated the sweet potatoes my family made for holidays. Too sweet! Yes I was a strange kid. I still do not understand why people put marshmallows and brown sugar on sweet potatoes. Why do you think they are called "sweet" potatoes? A few years ago I was invited to a Thanksgiving dinner and my assigned dish was the sweet potatoes. I could not convince my hostess that I was the last guest who should be assigned that dish. Made it that once but ate none of it.

The last year or so we discovered that we really do like sweet potatoes with no added "sweet" and now put foil wrapped sweet potatoes on the grill with our turkey or cut them in strips, coat them in olive oil and bake in a hot oven. Really yummy!

Hope you all enjoy your sweet potatoes (any way you like them) and the rest of the holiday feast!

LOL Tom-that brought back memories of Great Lakes,Ill.I remember marching into the chow hall one morning,and saw that in a huge pan.I thought I was going to vomit.I.E.-I passed on that one.The disturbing thing is,I saw other guys eating it without a problem.

For you people that dont know what SOS is...it stands for "sh*t on a shingle" and thats exactly what it looked like.

Tom-I was there 2 months after I graduated high school in Aug of 1964.This is an old black and white photo-was looking to see if I was in it LOL.They must be ready to graduate.How does classic know you ask? Well Im glad you asked...
I tell by the hair on their head-its a lot.They have been there awhile.When you first get
there they completely shave your head-so you look like you're on Chemo or ready to be put in the electric chair-either one I can do without.

Neg-is there a date on the card?

Tom did you ever go to the Coast Guard Academy in New London?

The quickest, easiest way...

Preheat oven to 350 degrees.

Combine in a 13 x 9 glass baking dish:

2-29oz Cans of Bruce's Yam's in syrup (drained, throw away the syrup, cut the yams into 1 inch cubes)

1/2 cup brown sugar
1 large can (20oz) crushed pinapple w/ juice
1/2 cup chopped pecans
Toss lightly and Bake 30 minutes

Remove from oven and cover the top with marshmallows. I use the big ones.

Place under broiler until marshmallows have melted and turned lightly brown.

Hide the evidence and wait for the applause.
And my usual southern cooking disclaimer... we don't usually measure anything, including our baking time. We just "know" when it looks right. So don't forget to use your intuition. And don't tell my Aunt, she would have a hissy fit if she knew I didn't use fresh yams!

LOL, Classic, that's ok.

Mom worked so Dad was the morning chef. SOS tastes really good if you grew up eating what I normally had to eat for breakfast.

SOS was the Sunday special, most days it was burnt oatmeal, white rice drowning in butter and white sugar, or chocolate gravy (don't ask!)

I would try allrecipes.com I use them alot - what's really great about them is that the recipes are rated so you don't get a real stinker of a recipe. Here's one I used that I like alot, but it is really rich but oh so good:

INGREDIENTS:

1/3 cup butter
1 cup chopped pecans

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
Bake for 25 minutes in the preheated oven, or until golden brown

McJane: That apple-yam casserole was an enormous hit for our crowd of 11 today! I doubled it, put it into a rectangular baking dish, layered yams/apples/yams/apples, poured the liquid with the raisins over it all, and baked it. WONderful flavors; everyone raved. I used Granny Smith apples, and didn't have the energy to boil yams so bought lightly-sweetened canned yams. Used 3 large cans.

This recipe is a real keeper. Thanks so much for sending it.
