you have several choices...you can GO ON VACATIOn and NOT sell..they can still LOOK but can't buy......OR...you can place a VACATION NOTE stating that you are on vacation and that IF they BUY, you will process when you get back and can state the date.

Just be careful when you set your away settings and that you place the automated message at the top of both your store and any auctions/fixed price items you may have running.
There's an option to show a message that you'll be away from your auctions until xxxx date and those fixed price and auction items will have that message at the top of each listing. The stores option doesn't have that - you have to create your own message and set it to post at the top of your store.
Before you go, set it and then wait a few hours and then check that everything is working fine and looks the way you want it. When we set ours when we left for eBay Live, it hid everything in our store and that's not what we wanted - nor do I remember setting it that way when we left.
Here are your options (from the Vacations Setting page):
Make my Store Inventory listings unavailable
New buyers will not be able to find, view, or purchase items from your Store Inventory listings.
Buyers who have already purchased items from these listings can still access them, so if you have multi-quantity listings, please also choose to display a vacation message in all of your listings to inform these buyers.
While your listing pages will become hidden almost immediately, their titles may continue to appear in searches for several minutes and in categories for up to a few hours.
Your Online Auction and Fixed Price listings will not be affected.
Display vacation message in all of my available listings
The message is only informational and does not guarantee you protection from receiving negative feedback. You still need to meet your responsibilities as specified in the eBay User Agreement.
