I realize this post will sink to the bottom of the page as fast as a penny in a koi pond, but I had to share with my buddies (especially since I am anything BUT a cook!)

If any of you like cinnamon as much as I do, you have to try this new recipe I put together. In the baking aisle of the grocery store, they now have "cinnamon chips" that are like chocolate chips, or peanut butter chips. Anyway, I made Cinnamon Fudge and here's all you do:

1 1/2 pkgs. cinnamon chips
1 can of Eagle Brand Condensed Milk
1 t. vanilla

In a saucepan, heat up the Eagle Brand Milk slowly on a low fire, add the bag and a half of cinnamon chips and the vanilla. Stir it all until it's smooth and pour it out in a flat pan. Stick it in the fridge till it gets hard, and there you go. This stuff is to DIE for. It tastes as good as those cinnamon candles smell!

Let me know if you try it. I made peanut butter fudge and cinnamon fudge for a potluck at work tomorrow. I'm anxious to see what everyone thinks.

Muriel, I have been looking for the cinnamon chips ever since I got a coupon for them. I have printed out your post. Now, if I could only find those chips! My grocery store doesn't have them.

I recently started eating a heaping teaspoon full of cinnamon on a piece of toast every morning on the recommondation of an old lady I know that is usually pretty sharp about things. She said it would give me stamina and help me lose weight.
I suspect that I will lose weight because I have found that since I started doing that I have very little desire for more than a small snack at lunch time. It also seems to be helping me get a couple hours further into the day before my butt starts dragging. We will see if the effect stays consistant for a month. there is always the possibility it is a plecebo effect but I did not expect the reduced desire for lunch.
Sometimes the fish get the coin.

Thank Muriel I think I will try that. Keep throwing these pennies in the koi pond (or shark tank.)

Sorry, Zil. I know you and I are not supposed to be eating sweets, but I couldn't resist this stuff. Of course I paid for it later. My co-workers now have a renewed love for me, since I promised to make it again soon. Also, this is going to make a great Christmas gift. And it couldn't be any easier!!

Muriel: Have you tried the cinnamon Altoids?? They are my favorite and low in fat also.

Are they "hot"? I don't like hot cinnamon. I'm so delicate, you know. Haha!

By the way, someone at work described the fudge as tasting "the way that cinnamon candles smell". I thought that hit the nail on the head.

I don't like a real hot cinnamon taste either. They are more sweet tasting which is why of course I like them !!!!! I like the metal tin also.

Muriel - Who makes the cinnamon chips, Hershey? Our small town grocery doesn't have them, but he will try and get them for me if I know what kind. The recipe sounds wonderful!

gravid - how is the daily dose of cinnamon coming along? Are you still feeling full and perkier! I love cinnamon and the idea of it suppressing my appetite a bit and perking me up sounds wonderful.

Well hell!

I just got back from the store with 1 bag of Hersey's Cinnamon Chips and now I see I need 1 1/2 bags. I was thinking the bag looked to be on the small side (sigh). Okay, I'll eat half of this bag and then purchase another and try your recipe. I sampled a few chips and they are delicious. Yup, a scented candle is a good description.

I'll have to remember to make the yucky face when I eat them in front of my wife, she's diabetic (more for me!)
