My sister is a Vegetarian. I'm not.

But that does not stop me from eating Vegetables.

I will eat Cauliflower raw. I'll cut it up and dip it in Ranch Salad Dressing.

I will take a box of Kraft Macaroni and Cheese, cook it per directions on the box, with a few minor changes. I'll add Broccoli to the pasta while the pasta cooks. I like to add a scoop of Cheez Whiz, Hot Sauce, Garlic powder and pepper.

A Tomato Whizzer Sandwich. Spread Cheez Whiz on bread, rolls, whatever, add sliced tomato, garlic powder and pepper.

Tomato Soup with Pasta. Cook the pasta and put it aside (drain, rinse in cold water so the pasta won't stick). Do the tomato soup thing and season to taste (Hot Sauce, Garlic, Oregano, pepper) Top with grated cheese.

Vegatarian Times has a big cookbook that I checked out from the library, with lots of good recipes. I started with The Vegetarian Epicure by Anna Thomas, and still use it. More to come....

One of my favorites is
Spicy Mandarin Chickpeas

2 19 oz. cans of chickpeas, rinsed and drained (I like black beans too)

2 10.5 oz. cans mandarin oranges, drained

1/4 Cup Strawberry Jam

2 Tbs spicy brown mustard

1/2 tsp cayenne pepper

Mix together,Heat and Enjoy. I serve this over brown rice. Tasty and Quick and Easy.

Mollie Katzen's "Moosewood Cookbook","Enchanted Broccoli Forest", and "Still Life With Menu Cookbook" are good. And a lot of Mideast cookbooks have good vegetarian recipes.

An experiment I tried a couple weeks ago -

I added about 1/4 by volume of mashed potatoes to shredded potatoes added a few tablespoons of milk to thin and some chopped onion and chives, then fried in a little oil or butter. It mad a much better latke than straight potato.

Many Thanks Greg!!! I'm so busy doing nothing on eBay all the time, I forgot about the Internet-thing!

Thanks to the rest of you too....you've given me some great ideas!

Oh, and snowyegret....I think I'm vegan.....I don't eat beef, chicken, pork, etc., but eat fish and seafood, cheese, eggs, etc.,......thanks for the help!

Someone already mentioned it, but Mollie Katzen's Moosewood Cookbook is AWESOME. One of the best vegetarian recipe books for people who have to cook for non-vegetarians, too, because a majority of the recipes are very hearty and filling (country fare, vegetarian style, with lots of soups, pies, starches, cheese dishes, etc.). I've used it to cook for die-hard meat eating relatives with excellent results (meaning, they didn't even miss meat!) Maybe I like it because it calls for very few "weird" ingredients (don't know about you, but I like to cook with what I have on hand, not run out and purchase seaweed or prune puree or buckwheat noodles.) Just about everything she lists is available at the grocery store or something most people already have on hand. And the style is simple and direct. Five stars for that one!!

My favorite recipe from the books is the cheese, tomato and mushroom pie. I can eat the whole thing myself and then wish for more (no small feat).

Vegans eat no animal products at all. No dairy, no honey, no anchovies. You're not quite a vegetarian, but seafood has some of the nutrients that are hard to get from other sources. Look for recipies that say Lacto Ovo, they will include milk and eggs (dairy products).
