Often, the winner does not use the checkout options and therefore their address does not show up.

Is there a way to put their address in the auctions info when you get it through an email?

Hello syes,

You can enter the buyer's information by going to Post Sale -> Awaiting Response, selecting the auction, and then clicking the "Response" button.
