Hello Angie,
When creating listings in Pro you should see, on the front tab (Basic Information tab) there is a schedule module. It's right above where you choose shipping and handling options. Please choose a date and a time and save your item.
Unfortunately you have to do this for each item in Pro but that way, when you synchronize, your items will be scheduled for launch and won't all go at the same time.
