I have had two buyers that got payment reminders and I didn't send them manually. Somehow, they are automatically being sent. This troubles me because I want to make the decision. Is there something that has changed?

I went to my account and saw that the box was checked to send reminders after 3 days. I don't know how it happened to be checked, but it's all good now.
You may edit your post-sale email settings by going to "My Account" --> "Post Sale Management". In order to turn off the automatic Payment Reminder emails specifically, you will need to uncheck the box for "Send automatically" in the "Payment Reminder" section of this page.
