You can find most editable areas in My Account under Global Preferences or under Post Sale Management. Can you let us know specifically what you want to edit? We will point you in the right direction and show you what to change.

The section in the final phase of the Checkout, there is a box that says "Special Instructions".... this is where I would like to add text but cannot find anywhere to do so.

Hello,
This section is editable by the buyer and isn't meant for the seller to input text. What text do you need added into the checkout? There is a section called Preferred Checkout Instructions in Post Sale Management under My Account where you can add in instructions that will show on the listing itself.
You can also edit the Checkout Process Welcome Message, which appears on the Checkout itself, before the customer inputs any information.
