Unfortunately there is no way to configure a separate pop3 server/sender to be used when sending the automatic notifications for storefront transactions (at this time.)
We would however be happy to pass along your comments as a suggestion to add this option in the future if possible.

One more question - different subject.
Is there any way to set up a log in/account for customers to edit orders and that sort of thing? Maybe a paid service from vendio?
It is not possible to set up the ability for your buyers to create a buyer account with Vendio. However, they should be able to edit their order by returning to the checkout link (unless the checkout process has already been completed, in which case you would need to manually revise the order).
