It is not possible to send the custom fields to Google, unfortunately. The custom fields are for your internal reference only. The product type is specified for Google at the time that you distribute your items to Google Product Search. To distribute your items to Google, please go to "Channels" --> "Comparison Shopping" --> select your items (one page at a time) --> click "Distribute" again --> select "Other" from the "Product Type" drop-down box --> enter your product type into the blank box to the right (you may use the "Apply to All" button at the bottom of the page to add it in bulk) and click "Distribute Your Items" at the bottom of the page.
The best place to go for information on Search Engine Optimization for your Store is "Stores" --> "Info & Policies" --> then click the link for "SEO Guide" at the bottom of that page.
