I'm not sure where to fix this, I've checked everything I can think of.
I sent a coupon to myself just to see what it looks like, and at the bottom, it showed the old name I gave to my store when I was first trying out vendio. At that time, I didn't have an official name for the store, so I gave it something generic.
Additionally, is there a way to edit the coupon's appearance and text as a whole?
This is a result of the macro for your coupon setup to use the 'seller market ID' for the signature line. You can edit this to appear any way you want via Preferences - Promotions. From here click to automate the coupon process, then you will see the customize options for your coupons.
You don't have to leave it setup to automate the coupons, you only have to switch that on long enough to access the customize options.

It did say "Brandon & Jessica's Store," but when I preview the coupon now, it just says "[Seller Market ID]".
The market ID should just be your eBay username, and not show your Vendio store name. I ran a quick test in your account and the coupon is being signed off as 'guitarofgold' - not "Brandon & Jessica's Store."
You can of course change this so it doesn't use your market ID, by simply removing the 'Seller Market ID' macro and replacing it with the wording you would prefer to display here.
