Why is it that when I enter the info for the Custom Item Specific and Save it in my listing and then go back later they are gone and I have to enter it all again?

Are you asking why it doesn't save the info, or why you have to enter it all over again?

why doesn't it save it so I don't have to enter it again when I add the pics?
