Yes - for auction items you can do this by clicking into the post-sale fulfillment checklist (click the number keys next to the item) and unchecking steps 1 and 2. Once these are unchecked, click the "go to buyer checkout" link.
For Vendio Store items, you would need to go through the purchase process to see the checkout options.
